Pola is a famous Malabar snack. There are many flavours of it made out of different ingredients. This recipe is Kaipola made from banana or etha 'kai' meaning banana in Malayalam.
Ingredients:
Ripe banana 2
Egg 4
Cardamon 2
Milk 1 tbsp
Cashew nuts
Ghee
Preparation:
In a pan, add one tbsp ghee and fry cashew nuts and keep aside. In the same pan, fry chopped bananas also and keep aside. Do not mash the bananas. In a mixer, add four eggs, two cardamoms, half a cup sugar, one tbsp milk and a pinch salt. Grind and transfer to a bowl. Add fried bananas and cashews. Melt some ghee in a non-stick pan and transfer the contents into the pan. Spread the cashews. Close the pan with a lid and cook in medium flame for 25-30 min. It is better to keep the pan on top of another tawa. Check with a skewer to see if thoroughly cooked. Transfer it to a plate. Kaipola tastes superb when served hot.
