Wheat is more healthier than maida for kids. Hence I chose to bake a wheat nankhatai for my little one.
Almonds/cashew nuts (optional)
Preheat at 170 C baking mode for 10 min
Bake at 170 C baking mode for 10-15 min
Grind one cup sugar and four cardamoms. Take two cups of wheat flour in a bowl. To this, add one cup gram flour, four tbsp semolina, one cup grinded sugar with cardamom, half tsp salt, half tsp baking soda. Mix it well and then add one cup ghee. Instead of ghee, melted butter can also be used. Mix it well to form a soft dough. Make small balls out of the dough and press it to form the shape of a cookie. Add broken almonds or cashews on top if needed.
Bake at 170 C in baking mode for fifteen minutes. When taken out of the oven, the nankhatai will be soft. Allow it to cool fully. Here, I got a total of thirty four nankhatai pieces.
